That said, these Vietnamese Chicken Sandwiches are my favorite. I’m a sucker for a good sandwich, and this one is a doozy: crunchy vegetables, toasted bread, creamy mayonnaise and warm chicken.
The recipe is flexible, too: have pork on hand instead of chicken? Go ahead and use it. Want to pack these up for a picnic? Feel free- — the bread won’t be hot, but they’ll still have crunch. For a dose of added authenticity, add a few dashes of Sriracha or whatever hot sauce you have on hand.
